Tasting notes

 

  • Colour : Gold colour
  • Nose : intense and complex nose of brioche, nut and pineapple, together with lime-blossom and quince aromas.
  • Palate : Light but full bodied, rich, remarkable length in the mouth.
  • Cellaring : In the first five years you will enjoy its fruit aromas which will then turn into more mature aromas.
  • Food & Wine Pairing : This wine has character and can be drunk anytime in the day. Ideal served at 10°C with fish and other seafood. Also excellent with cheese: goat, old Cantal. Will also pair perfectly with “foie gras”.

Vineyard

  • Type of soil : Clay and limestone with gravel
  • Age : from 20 to 30 years old
  • Pruning : Simple Guyot
  • Harvest : By hand
  • Average Yield : 45 hl/ha
  • Density of planting : between 4400 and 5400 vine plants/ha
  • Elevation : 250m
  • Climate : Mediterranean with oceanic influence

Vinification

No skin maceration; pressing with Bucher pneumatic press. Juice selection is done at the press. Cold settling of the juice. Slow fermentation in oak at low temperature (16°C). 60% of the wine undergoes malolactic fermentation in oak barrels and then 100% of the wine is aged in oak barrels during 9 months (1/3 of the barrels are new oak and 2/3 are 2 years old). Half of the barrels are French oak, the other half are American oak.
