Tasting notes

 

  • Colour : Light red with raspberry tint.
  • Nose : Fine and charming with aromas of little black fruit, soft spices and Kirsch
  • Palate : Round in mouth, with aromas of red fruit and liquorice laying in a nice tannic structure, showing delicacy and elegance.
  • Food pairing : best served at 15°C. To be served with grilled meat: lamb, veal or pork, game, tapas and soft /medium cheese.

Vineyard

  • Pruning : simple Guyot
  • Vineyard age : 13 to 23 year-old
  • Soil type : Clay and limestone
  • Average yield : 55 hl/ha
  • Climate : Mediterranean climate with oceanic influence
  • Altitude : 160 to 180 m
  • Density of planting : 4 400 plants/ ha
  • Harvest : Mechanical harvest at night to protect from oxidation.

Winemaking

Destemming of the grapes. Cold pre-fermentation maturation at 10°C. Fermentation under temperature control (23°C) for 5 days. Daily pumping over and plunging during fermentation. Both the malolactic fermentation and ageing are carried out in oak barrels. The wine is aged for 4 months in oak barrels
